What's Up Wednesday - September

Once again I am joining the link party for What's Up Wednesday! 



1. What we are eating this week
 Yay for Hello Fresh!
This week we have eaten:
Italian Sausage and Baby Broccoli pasta

Coconut-crusted chicken fingers with roasted green beans and fries

Sesame Shrimp with scallions and roasted zucchini

AND tonight I am bringing a friend (who just had her fourth little baby!!) my favorite BBQ Pork Sliders (recipe from No More To Go) with coleslaw and mac and cheese. Of course we will be having some as well!

This week nada. And it feels good.

Although it won't last long because October 1st is Saturday and I can't wait to pull out all our fun Halloween decorations!

Well, this was the only selfie that I took this month. lol
I am super excited about wearing jeans again...I am not sure I have ever been excited for that but at this point I am kinda over shorts. And the heat. Just like everyone else.

13. What is your favorite fall recipe
I'm gonna go with my favorite chili recipe - nothing screams fall quite like chili, right?? Make sure to serve this with lots of cheese and FRITOS!

South Texas Three-Meat Chili

1lb ground beef
12 oz uncooked chorizo sausage
1lb beef cubes
I medium onion, chopped
1 fresh poblano chile, seeds removed, minced
2 fresh jalapeno chiles, seeds removed, minced
6 large cloves of garlic
3 TBSP Chili Powder
2 Tsp kosher salt
2 Tsp Ground Cumin
2 Tsp ground black pepper
1/2 Tsp Cayenne Pepper
2 cups beef broth
14 1/2 ox crushed tomatoes
8 oz tomato sauce

1. Place skillet over med-high heat. Add chorizo (squeeze from casings) & ground beef
2. Stir, breaking meat into small crumbles with spoon, 6-8 minutes or until beef is no longer pink
3.  Place cubed beef in a 6-quart pot over medium-high heat with onion, chiles and garlic. Brown 6-8 minutes, or until beef is no longer pink
4. Add ground meat mixture, chili powder, salt, pepper, cumin and cayenne. Stir to combine and cook for 2 minutes
5.  Stir in beef broth, tomatoes and tomato sauce, bring to a boil; cover pot and reduce heat to low
6. Simmer gently for 50 minutes, stirring occasionally

Stonewall Speakeasy

Saturday night was one of the annual Stonewall themed parties - our first of many I have no doubt! Back in April Sarah asked me if we wanted to help host this party since Ryan would be in kinder this year - so glad we did! It was such a great way to get to meet more SJE families.  And the party was pretty fun too!

At the end of August all of the ladies met up at Bodega for some wine and party planning. These ladies are efficient! We talked ideas, figured out what needed to be done and assigned jobs.  This isn't their first rodeo. 

Invitations were printed and handed off to Sarah and myself. We bought little glass bottles with corks and filled them with moonshine to deliver with the invitations.

Once we had them ready to go we passed them off to be hand-delivered.

Next up was taking mugshots. 
We thought this would be so fun for each of the hosts to be accused of a "20s themed" crime and have our mugshots places around the party as decoration. Carolyn and Casey pulled all of this together - assigning crimes, assembling props, the backdrop, photography, printing...the whole thing.  They are amazing! We just showed to to get our picture taken in hair and makeup and they did the rest. 



 




I love how they turned out! They also kept the pictures a secret until the night of the party - it was so fun walking around and seeing everyones crime and pics!

So my job was to help with decorations - my favorite! lol There was a lot of gold and glitz!





And now for the PAR-TAY!

Such a fun night of "dressing up, meeting new friends, dancing and "not drinking".

First Day of Preschool



I started with Grayson - he was excited to have his "first day".  

Hayden, on the other hand, wanted to run around naked..... 
She wouldn't let me put her dress on.



Heading into school brought a flashback from two years ago when I dropped Grayson off in the 2's class and Ryan in the 4's (same rooms & teachers too!) And FYI the class rooms are at complete opposite ends of the school. Of course back then I had Hayden in tow...so it's a little easier without the newborn!

Hayden was so excited to be going to school, especially at the SAME school that she has dropped her brothers off so many times before. She ran down the hallway, deposited her belongings in her cubby, gave me a hug and a kiss and ran in her classroom. Seriously. This girl was so ready! I was actually quite impressed because none of the kids were crying - they were all pretty darn happy! 

She ran in and found some toys to play with...

Then it was Grayson's turn! We trekked all the way to the other end of the school to his classroom...

We love Ms Karen & Ms Liz. Ryan had them two years ago.

After school we were suppose to go to Grayson's 4 year checkup but I got the appointment time mixed up and missed it. Oopsies! So we went to Monster Yogurt instead....I am sure they enjoyed this much more than the doctors office...and shots!


Little cuties had a great first day!
